I'm Katie. Welcome to my blog. I am an empty nester meandering through my midlife years one page at a time. We sold our antique home on the South Shore of Massachusetts in October 2020 and relocated to the Dallas suburbs and our forever home.
I love to write about books, movies, TV, celebrities, shopping, decorating, Bravo, and weekend adventures. My favorite writing material, however, is derived from my family: the Mister, my girls, #1 and #2, my favorite son-in-law, and my new little mischief-maker, thoroughly darling Millie. ReplyDeleteAlso, under recipes on my blog there are a couple pasta dishes (if you want something with a little more substance) and they can be prepared ahead. Also, an antipasta tray (always been a hit and super easy to throw together).
Katie, the BEST appetizer recipe I have it for Garlic Grilled Shrimp & it can be made completely ahead of time.

It is DELICIOUS & gets rave reviews every time I serve it, honest. And it is easy...just mix the shrimp with the marinade for awhile, grill & serve either cold or right off the grill...your choice.

This is about as easy as you can get but tastes delicious! You will have to do a post with all of the recipes you get...I am always looking for new and EASY appetizers!
ReplyDeleteSpicy Corn Dip
1 16oz bag frozen white corn (sometimes I have to use yellow/white combo)
1 8oz package cream cheese, softened (I used reduced fat)
1/4 cup butter, softened
2 T cumin
2 T chopped, pickled jalapeno peppers (I found "Mt. Olive" brand diced jalapeno peppers in the pickle aisle)
Salt and Pepper to taste
You can make it hotter by adding some of the juice from the jalapeno peppers.
Cook corn according to package directions; drain. Combine corn with butter and cream cheese stirring until blended. Add cumin and peppers to taste. Serve warm or at room temperature with tortilla chips.
I just eat what everyone else makes :)

Mini Mediterranean pitas- can be bought at Whole Foods and many markets, fill with a dollop of humus, olive tapenade, crumbled feta and finely minced cucumber, tasty, easy and delish!
ReplyDeleteCrostinis- pretty and so easy. Sliced baguette cut on diagonal, drizzle with olive oil bake for 5 min. Add brushetta, or chopped mushrooms wiht olive oil or tomato and basil and mozzarella (I liek doing a variety) looks so pretty on a platter. Add chopped basil and Parmesan flakes on top.....yummy!
Shrimp cocktail- easy peasy and always a hit
Yogurt dip- yogurt and half low fat sour cream, Knorrs spring vegetable, 1/2 a box of frozen spinach, 1/4 cup Parmesan, mix all together. Add cut veges or buy small disposable shot glasses from Party City and put a dollop of dip in then add 4 or 5 stalks of veges to make mini individual crudites!

ReplyDeleteThis is the best and easy smeasy. Slice fresh fig in half, top with cheese of choice.....Humbolt Fog, Gorgonzola...whatever. Wrap with fresh prosciutto and Voila you are a hit. Goes so well with drinkies. Enjoy!
ReplyDeleteI always keep a brick of cream cheese handy for drop in guests. You can top it with salsa or jalapeño jelly and serve it with corn chips or wheat thins. Super easy and delicious. I just went to a party where my friend made the most delicious cheese tray. She purchased cheese from Trader Joe's and arranged it on a large platter with berries and dark chocolate scattered around the different cheeses.
