I hope all is well in your world. I have been blogging for thirteen years and there is one request from my readers that has remained constant.
When is the Mister going to give us some recipes?
I am happy to report that today is the day. Last week the Mister was testing a couple of recipes for a future dinner party. I asked if I could take some pics.
He groaned.
I took that as a yes.
Cake Recipe:
1 can (14 oz) Sweetened Condensed Milk
1/2 cup Lemon Juice
2 Eggs
1/4 cup Melted butter
1/2 Cup Self Rising Flour
1tsp Vanilla
1 ea Zest of lemon
Meringue Recipe:
6 egg whites (room temperature)
pinch Salt
1 Cup Sugar
1/2 tsp lemon juice
(or 1/4 ts cream of tartar)
Method:
-Preheat oven to 350°F
-lightly grease silicone tart pans ( see below)
(I use Pam)
- combine all wet ingredients and Zest in a bowl and mix with a spatula till combined
- sift in self-rising flour and gently mix only until combined and smooth
-divide into greased silicone tart pans
-bake at 350F 20-25 minutes
(or until the cakes are slightly brown on the edges)
-remove from the oven and rest for 5-10 minutes
-remove from the silicone pans and refrigerate
Prepare Meringue:
- place room-temperature egg whites in a mixing bowl
( use a little lemon juice on a paper towel to whiten the inside of the bowl and whip to remove any latent oils)
-add lemon juice and whip at high speed while adding in the sugar slowly
-whip until still peaks are achieved
Pipe or scoop on top of the cakes and use a butane torch to lightly toast the meringue
This is a light dessert that is packed with deliciousness!

DeleteThose look good, us bakers can't go wrong with sweetened condensed milk and lemons. I make a no bake lemon cheesecake with one can and it lends great texture. Top it with a swirl of bon maman raspberry spread.

ReplyDeleteHi Mary. The misters said it is the zest of one lemon. He uses the microplame zester that was listed on the blog from Amazon. The pan he uses are the silicone firms shown on the blog too. (3.9”) Happy baking.

DeleteThose look delicious, but you lost me at butane torch. Unfortunately, I torch enough things accidently so I am not sure I could be trusted to use a torch on purpose! But I would love details on your blue check chairs, they are exactly what I have been looking for in my new home.
